About Hyotan Onsen
Hyotan Onsen is a historic onsen bathhouse in Kannawa Onsen, Beppu, Oita Prefecture, and the only one in Japan to have earned three Michelin stars seven times in a row. Its highlight is nama-yu, “raw” onsen water of 100 percent purity fed straight from the source, never recirculated, and cooled to a comfortable temperature without adding water by Yuamitake, a bamboo cooling device developed in-house. The baths are varied, from a gourd-shaped rock bath and the famous taki-yu waterfall baths to an open, airy open-air bath. After a hearty sweat in the traditional mushi-yu, a steam bath that uses onsen vapor, enjoy a superb cool-down in a luxurious cold plunge of cooled source water. With sand baths, 14 types of family baths and the chance to try jigoku-mushi cooking in onsen steam, it lets you savor Beppu’s bathing culture in full.

Onsen water of 100 percent purity, fed straight from the source, never recirculated, and cooled in an instant by the bathhouse’s own Yuamitake technology. Cold plunge
A very rare cold plunge filled only with source water cooled in an instant by Yuamitake, the bathhouse’s own cooling device. With no tap water added at all, this 100 percent pure onsen water is remarkably soft on the skin, gently and refreshingly cooling a body flushed from the mushi-yu or the onsen.
